Snack Attack - Spinach, Pepper and Chilli Muffins Recipe

At the moment I am desperately trying to make my life easier by preparing snacks for in the week.  Stops cravings and impulse buying.  

A couple of my instagram followers wanted the recipe of these bad boys so here it is...

Firstly, you will need the following:-

- 25 egg whites (I purchased a carton of 15 egg whites and also used up some eggs I had in the fridge)
- 2 handfuls of Spinach
- 2 Sweet Peppers
- 2 Chilies 
- Low calorie cooking spray
- 1/2 White Onion
- Paprika (to taste)

Instructions

- Chop the spinach, peppers, chilies and white onion up in to teeny pieces and mix them together
- Separate your egg whites and egg yolk (if necessary) and put the whites into a pouring jug
- Spray the low calorie spay (1 each) into each muffin hole
- Put the mixture of spinach, peppers, chilies and white onion into the muffin holes until they are around half to 3/4's full.  Just use all the items up equally and you will be fine
- Pour the liquid egg whites into each hole until full (but just remember you need to be able to put in oven without spilling!)
- Sprinkle Paprika on top of each muffin (optional)


It should then look like this...


- Cook on 120 degrees celsius/ 250 degrees fahrenheit  for 60 minutes.  (You could up the temperature and do it quicker but I wanted to avoid any burning!)

And voila!  Muffins are ready!


- Eat warm alone or with a salad.
- Cool the rest and pop into freezer bags and pop into fridge or freezer and use as a snack in the week!!
